  1. Rinse 35 g raw quinoa very well under running water for 1–2 minutes.
  2. Add quinoa to a small saucepan with 100 ml water.
  3. Bring to a boil, then cover and simmer on low heat for 12–15 minutes, until the quinoa is tender and the water is absorbed.
  4. Turn off the heat and keep covered for 5 minutes. Fluff with a fork and allow it to cool slightly.
  5. Mix curd, lemon juice, chopped mint and roasted cumin powder to make a smooth dressing.
  6. Add cooked quinoa, cucumber, tomato and carrot to a bowl.
  7. Add the paneer and pour the dressing over it.
  8. Drizzle 1 tsp olive oil and sprinkle pumpkin seeds on top.
  9. Mix gently and serve immediately.
