π¨βπ³ Instructions
- Rinse 35 g raw quinoa very well under running water for 1β2 minutes.
- Add quinoa to a small saucepan with 100 ml water.
- Bring to a boil, then cover and simmer on low heat for 12β15 minutes, until the quinoa is tender and the water is absorbed.
- Turn off the heat and keep covered for 5 minutes. Fluff with a fork and allow it to cool slightly.
- Mix curd, lemon juice, chopped mint and roasted cumin powder to make a smooth dressing.
- Add cooked quinoa, cucumber, tomato and carrot to a bowl.
- Add the paneer and pour the dressing over it.
- Drizzle 1 tsp olive oil and sprinkle pumpkin seeds on top.
- Mix gently and serve immediately.
