  1. Wash and soak the rice and moong dal for 15–20 minutes.
  2. Add rice, dal, carrot, bottle gourd, spinach and about 300 ml water to a pressure cooker.
  3. Cook until soft and well combined.
  4. Heat Β½ tsp ghee, add cumin seeds and pour over the khichdi.
  5. Mix cucumber with plain curd to prepare a simple raita.
  6. Serve the khichdi warm with the raita.
